Wei Wei Lobster Ball Corned Soup

Food historians say that soup is considered to be as old as the history of cooking. In times when food was insufficient, putting various ingredients in a pot to boil was not only cheap, but satisfying as well. Plus, its easy concoction was both accessible for the rich and poor alike.

As years went by, the soup evolved according to culture having various versions like the Spanish gazpacho, French onion, and New England chowder.

Try this easy Wei Wei soup that you can serve for your family for a hearty dinner time.

Ingredients:

6 Wei Wei Lobster Balls
3 tbsp. unsalted butter
2 tbsp. olive oil
1 large onion, chopped
1 garlic clove, finely chopped
Corn kernels
Salt and pepper
2 spring thyme
3 tbsp of flour
2 cups of milk

Procedure:

Heat butter and oil in a large pot over medium-high heat.

Add onion and garlic and cook, stirring often, until softened and beginning to brown, about 5 minutes.

Add thyme sprigs and 5 cups water to pot.

Add the Wei Wei Lobster Balls; season with salt and pepper. Cook, stirring occasionally, 3-4 minutes.

Add the flour, stirring well. Gently mix the milk to the pot.

Add the corn and salt and pepper to taste

Stir together and serve.
