The great thing about the Filipino classic ‘Adobo,’ is that you can cook almost any dish in this way. Tofu, or tokwa in the local term, is surely not an exception to this. The watery bean curd that originated in China gets a makeover with our classic adobo.

INGREDIENTS:
• 250 grams Wei Wei Gindara Tofu
• 1/3 cup soy sauce
• 1/3 cup white vinegar
• 1 tablespoon minced garlic
• 1 tablespoon chopped onion
• 2 pieces bay leaf
• 1 cup water
• 2 teaspoons sugar
• 2 tablespoons cooking oil
• Salt and pepper o taste
PROCEDURE:
1. Heat oil in a cooking pan. Fry the Gindara Tofu until golden brown. Set aside.
2. In a separate pan, sauté garlic and onion until golden brown.
3. Pour water, soy sauce, and vinegar in the pan. Let it simmer on medium heat for 2-3 minutes.
4. Pour vinegar to let the sauce thicken. Let simmer on medium heat for another 2-3 minutes.
5. Put the Wei Wei Gindara Tofu. Let it simmer for another 2-3 minutes.
6. Add the bay leaf, salt, and pepper to taste.
In a clean bowl, pour that deliciously good Adobong Tokwa to serve for your family. Note that this serving is good for two persons; but if you want to double the fun with your whole family, then double the servings as well!
