Complimenting the glowing Christmas lights and everyone’s faces are the gastronomic dishes that are served on the table—Pinoy-style spaghetti, hamonado, fruit salad, fried chickens along with all the food that can be deep fried, and tangy fruit punches. Oh! And there’s lola’s Seafood Paella—one of the traditional main stars of the Christmas banquet. Wei Wei Seafood Paella Recipe
Ingredients
- 1/2 cup Olive Oil
- 1 cup glutinous rice
- 1 cup ordinary rice
- 2 minced onions
- 1/2 kilo chicken (cut in serving pieces)
- 4 chorizo Filipino (sliced 1/2 inch thick diagonally)
- 1/2 kilo Wei Wei Vannamei Shrimp
- Wei Wei Crab Fish Buns
- Wei Wei Squid Rings
- Wei Wei Scallop Balls
- Wei Wei Seafood Buns
- Wei Wei Fish Balls
- 1/2 cup mussels
- 1 hardboiled egg (sliced)
- I can green peas
Sauce Ingredients
- 1 can tomato paste
- 1 small can tomato juice
- 4 tablespoon sugar
- 1 tablesoon fine salt
- 1 tsp pepper
- 2 big red bell pepper (sliced 1/4 strips)
Procedure
- For the sauce: Mix the tomato paste, tomato juice, sugar, salt, pepper and red bell pepper in a bowl. Set aside.
- Cook 1 cup of ordinary rice and 1 cup of glutinous rice.
- In a different pan, sauté garlic and onions. Then, add chicken and chorizo and cook until brown.
- Add Wei Wei Vannamei shrimp, squid rings, lobster ball, scallop ball, and fish ball in the same pan and continue stirring for 5 minutes. Add the prepared sauce and simmer for a while.
- Meanwhile, place Wei Wei seafood and crab fish buns in a steamer for about 5 minutes. Then, set aside.
- Transfer the cooked meat and balls to a platter. Add the rice to the sauce and mix well. (If too wet, cook over low fire a few minutes more)
- Bring back the meat and balls on top of the cooked rice. Bake at 350 °F for about 30 minutes.
- Garnish with hardboiled eggs, green peas, and Wei Wei seafood and crab fish buns just before serving.
