What to Do with Holiday Leftovers?

A common dilemma after the Christmas season is what to do with leftovers. Especially if you have a big family, then for sure you have a lot on your plate. You don’t want those remains to go to waste and of course, you can’t just throw them away.

So here are some ideas on what to do with those bunch of leftovers in your refrigerator.

Ham

The star of the Noche Buena won’t lose its shine when you transform it into a ham and cheese omelet. Dice those leftover ham and mix it into the egg mixture, add cheese to make it gooey and yummy. You can also use the ham in making your ham and chorizo fried rice, then partner it with the omelet. Your kids will surely enjoy a tasty breakfast in the morning. 

Lechon

The all-time favorite Pinoy food once again graced the table during the Christmas season. And what better way to transform it than into the flavorful lechon paksiw we all came to love. Plus reheating it just makes it so taste so much better! But if you’re tired of the usual leftover transformation of lechon, try making a garlic lechon pasta. Brown a good number of crushed garlic cloves over medium high heat, then put in some cooked pasta (you can use leftover pasta as well), add a handful of roughly chopped parsley, then chopped up lechon. Scatter some grated cheese on top and voila!

Chicken

Comfort food goes a long way. And what better way to reuse that chicken leftover than making it into a hearty sopas. Prepare your chicken broth, then add some chopped onion, celery, and carrots. Put in your shredded leftover chicken and put in the macaroni to cook. To add some flavor, you may also put in some Wei Wei’s Mushroom balls. Add salt and pepper to taste and you’re done! You can also whip up a chicken sandwich for merienda so that your kids won’t munch on some junk food instead.

Mashed potato

You can never go wrong with mashed potato, especially when Christmas season is the “carbs on carbs” season. Convert that creamy mashed potato into potato pancakes. Mix the mashed potatoes with enough flour, eggs, minced onion, and milk to form a thick batter, then fry until golden brown. You can serve it with bacon topped with ketchup for a delicious heavy breakfast.  Or if you opt for something light, serve your leftover mashed potatoes as an appetizer, a potato soup. Mix the mashed potatoes with homemade broth, and to add color and flavor, put in some Wei Wei’s Flower Sliced. Now you have something to warm you and your family up this cold season.
