INGREDIENTS
Wei Wei Vannamei Shrimp
1/2 cup mayonnaise
2 tbsp fresh lemon juice
Zest of one lemon
1/2 cup scallions, diced
1 tbsp old bay seasoning
PROCEDURE
1. Boil Wei Wei Vannamei Shrimp in salted water for a few minutes until the flesh is white (3-4 mins).
2. Drain and rinse Wei Wei Vannamei Shrimp with cold water.
3. Chop the Wei Wei Vannamei Shrimp.
4. Place chopped Wei Wei Vannamei Shrimp in mixing bowl.
5. Add all other ingredients and combine.
6. Serve on a bun, in a fresh roll, or refrigerate for a day or two.
